Happy St. Patricks Day!


Pistachio Cake
1 box white cake mix
2 (3 oz.) pistachio pudding mix
1 cool whip

Make white cake mix as directed. Add one pudding package to the cake batter and bake as directed on the cake box. While cake is baking, make the second pudding box with regular pudding instructions (i.e. with 2 cups milk). When pudding is firm, fold in the cool whip. When cake is done, let cool and then frost with the cool whip and pudding mixture.




Pistachio Pudding Salad
Pistachio pudding-1 large box made with ½ c. less milk than directions say
1 carton cool whip
Mini marshmallows
1 can crushed pineapple, drained well

Mix together all ingredients. Chill and serve.

I know I have mentioned this before, but food is pure FUN to me!! Our family has TONS of traditions that revolve around food..or, I should say, food just makes them more fun. Tonight we played a little game to see how many GREEN items we could eat for dinner. I think we might have broken a world record :)

We had green grapes, green beans, asparagus, green/lime jello, pistachio salad, spinach salad, cucumbers, green peas, green rolls (made by my sister--they were awesome!!), Shepherds Pie with green mashed potatoes on top, pistachio cake, green cake w/ green butter frosting, and green mint ice cream. Wow!! That was a meal! Who would have thought our kids would think eating so many vegetables could be fun. They all cleaned their plates! Maybe it was because they wanted dessert. Yes, it was probably a little excessive, but it sure was fun!
