Easy Pumpkin Chocolate Cookies



Here is one of my favorite EASY cookie recipes. These cookies couldn't get easier, they have only THREE ingredients...canned pumpkin, chocolate chips (optional), and 1 spice cake mix. To make these cookies just mix the dry cake mix together with the canned pumpkin (1/2 of a large can of pumpkin), throw in the chocolate chips, put spoonfuls of the dough on a cookie sheet, bake at 350 for 10-12 minutes (or until cake-like texture) and enjoy!

These are also a great 'food storage' treat to have on hand. Comfort foods are important to have in your storage--especially if we had to eat solely out of our food storage for awhile. Each of these ingredients can be stored long term, so stock up when they are on sale! Who doesn't want chocolate in your storage? I have also heard this recipe is a Weight Watchers favorite--without the chocolate chips these cookies are VERY low fat. It helps you feel better about eating cookies :) If you are not worried about calories (I should be!), these are also great with cream cheese frosting. YOu can sandwich the frosting in between two cookies and boy are they good!

Here's a variation if you have a yellow cake mix. These are really good too!

18 1/2 oz. yellow cake mix
2 t. pumpkin pie spice
1 c. canned pumpkin
1/4 c. butter, softened

Mix for 2 mins. drop on cookie sheet. Bake at 375 degrees for 12 mins.
Let cool and frost with store bought vanilla frosting or make your own frosting.

These are the best cookies. This was origionaly a weight watchers recipe. If you use only 1 c. of choc. chips they are only 1 point per cookie.

Same ingredients to make muffins:
1 small can pumpkin
1 cake mix any flavor (I prefer carrot)

Mix up (do not add egg, water or oil as box directs)
Put 1/2 cup in each muffin tin section
Cook about 20 minutes

You can make a glaze of powdered sugar and milk and dribble on top if desired

Weight watchers 1 point mufin

I love your naan bread recipe! Thank you! I have a question. Do you think your program allows for dietary differences? My family and I do not eat starch and protein together at one meal (I have never been healthier for it!) so I am wondering if I could utilize your program without alot of tweaking on my part?

You can also mix the following:

1 light colored cake mix with a can of diet sprite or 7 up.

1 dark cake mix with one can of diet coke.

Very yummy! - can bake as cupcakes or cookies.

Yes, our meal planner could be adjusted to your families specific diet. We always give you 8 main dish recipes, side dish recipes, food storage recipes, and dessert recipes. From these recipes you could come up with combinations that I am sure would work well with your diet. If a side dish was a starch and their was a protein in the meal, you could omit the side dish. Each week we always have 2-3 options for vegetarian dishes and meals that can be adjusted to be low fat.
