Buffalo Chicken Salad with Blue Cheese Dressing

I know summer is over, but I couldn't believe I hadn't posted about my newest favorite salad . I have made this salad no less than 10 times in the past 3 months. I have been on a buffalo kick lately, so this is no surprise, but I can't tell you how awesome the combination of flavors are in this salad. The spicy chicken, creaminess of the blue cheese (or ranch dressing), tomatoes, corn, celery, avocados, blue cheese (or feta cheese), etc. This salad is packed with flavor and is officially now in my top three favorite salads. If there is a warm day left in the next few weeks and you are craving a salad, put this one on your meal planner! It comes together in no time if you have grilled chicken in your freezer. Hope this salad brings back a few of your favorite memories from this past summer. Where does the time go? Only 53 more days until Christmas..ah!

Buffalo Chicken Salad
Homemade Blue Cheese Dressing (or you can use ranch dressing if you prefer):
1/2 c. sour cream
1/4 c. milk
3 T. blue cheese
2 T. apple cider vinegar
1/2 t. garlic powder
1 t. salt
1 t. coarse black pepper
Mix together dressing ingredients and keep cold until ready to serve.
Salad Fixings:
3 boneless skinless chicken breasts seasoned with Montreal Steak Seasoning and Frank's Hot Sauce--cook or grill the chicken until no longer pink. Place the cooked chicken pieces in a bowl and smother the chicken in Frank's Hot Sauce to your liking--I like a lot!
2 heads romaine lettuce (you can also add spinach), chopped
1 c. shredded cheddar cheese
2 c. frozen corn that has been sauted on high heat with butter until golden brown
2 tomatoes, diced
1 avocado, diced
1 c. celery, diced
4 eggs, boiled, peeled and chopped
1/4 c. green onions, sliced
Blue cheese crumbles, garnish (optional)
Place all of the salad ingredients in to a large bowl and serve with blue cheese or ranch dressing on the top. Drizzle with extra Frank's sauce if you like it extra spicy.
