Wow! Where has the week gone? It must be December or something? I hope everyone is enjoying this wonderful Christmas season. I think I am finally finished up with my shopping and hope to sit back and relax a little before the month is over. I have been spending plenty of time in the kitchen and have been enjoying cooking and baking, making homemade toffee, sugar cookies and several batches of my new favorite peppermint chocolate cookies. The last few weeks my favorite ingredient in my kitchen has been fresh oranges. Here in Utah we have an awesome grocery store called Rancho Market that often has oranges on sale for 5 lbs. for a $1--awesome! The next few days I will be sharing with you a few of my favorite holiday recipes that call for fresh, juicy oranges.
These Cranberry Orange Waffles are probably the best waffles I have EVER had. The cranberry butter syrup on top you could drink with a spoon! I love the combination of sweet and sour and the citrus flavors are incredible. Not only are these waffles delicious but they are also so pretty and festive. These waffles would be perfect for a special Christmas morning breakfast ;)
Christmas Cranberry Orange Waffles
4 c. white flour
1 t. salt
1/3 c. sugar
2/3 c. oil
4 t. baking powder
2 c. milk
1/2 c. orange juice
1 c. fresh cranberries, chopped
Fold in the egg whites
In two bowls, separate the three eggs placing the egg yolks in a large mixing bowl. In the bowl, combine the sugar, oil, egg yolks, milk and orange juice. Blend until smooth. Add the remaining ingredients minus the egg whites. Blend until the flour has all been combined. In the second bowl beat together the egg whites until fluffy and are whipped to stiff peaks. Fold the egg whites into the waffle batter and mix in softly until mixture is barely mixed. Heat a waffle iron, grease well and cook waffles until golden brown.
Cranberry Butter Syrup
1 stick butter
1 c. sugar
1-1 1/2 c. chopped fresh cranberries (I love cranberries and sour so I used more like 1 1/2-2 c.)
3 T. whipping cream or evaporated milk
2 T. freshly squeezed orange juice
Zest of one orange or lemon
Chop the fresh cranberries by hand or in a food processor. In a sauce pan slowly melt the butter and sugar together until the butter is mostly melted. Turn up the heat and add the rest of the ingredients. Stir the syrup and then bring the mixture to a slow boil. Let boil for a couple of minutes until the sugar is completely dissolved and the sauce has thickened. Once the sauce is thick, remove from heat and set aside until waffles are finished.
