Tomato Confetti Fritters

Okay, I know this is totally last minute, but if you have these ingredients on hand and are still searching for the PERFECT appetizer for your parties this week, this is the one for you!! My Mom has mastered these fritters and we all crave them and can't get enough. These fritters have such fun flavor! They are filled with yummy vegetables and filled with a soft, flavorful batter. Deep fat fry them and dip them in this creamy, savory sauce and hold me back!! I could eat an entire batch of these all by myself (diets start in a couple days, right?!?) The only items you might need that you don't have on hand would be mint leaves and Old Bay Seasoning. If you have never cooked with this, it is a salty, creole-ish type of flavoring. It makes this dish, so you might need to run to the store and grab that before you begin. It will be well worth your time, I promise.

Tomato Confetti Fritters
1 quart vegetable oil, for frying

Dip:
1/2 c. mayonnaise
1/2 t. Old Bay Seasoning
1 T. hot sauce (like Franks)
1 T. lemon juice
Salt and pepper to taste

Fritters:
2 large red tomatoes, diced and extra liquid drained (about 2 c.)
2 large green tomatoes, diced (about 2 c.)--if you can't find these or don't have them from your garden, you can use more red tomatoes
2 eggs, beaten
2 stalks green onions, sliced
1 T. fresh mint, chopped
1/4 c. fresh chipped parsley
2 T. cornmeal
1-1 1/2 c. flour (depending how much liquid you have from your tomatoes)
3/4 t. baking powder
3/4 t. salt
1/2 t. pepper
In a small bowl, mix together the dip ingredients until combined. Set aside. Heat oil to 320 degrees. For the fritters, dice the tomatoes and drain as much liquid from them as you can. Place them in a bowl and add the eggs, green onions, mint, parsley, cornmeal, flour baking powder and seasonings. Working in batches, drop a golf sized portion of the batter into the hot grease and fry until golden brown and cooked through, about 3-4 minutes. Transfer to paper towels to drain excess oil. Serve with the Old Bay Dip.
