8 oz. cream cheese, softened
2 chipotle peppers in adobo sauce, chopped fine
Juice of 1 lime
2 Tbls. mayonaise
1 Tbls. cilantro (dry or fresh), chopped fine
1/2 tsp. salt
1/4 tsp. black pepper
In a microwave safe bowl, add the cream cheese. Microwave for 30 seconds, or until soft and mix with a fork until smooth. Add the chopped chipotle peppers and adobo sauce, lime juice, mayo, and cilantro. Season with salt and pepper to your liking and set aside until ready to make your wraps.
Tortillas (sundried tomato was great)
Cooked and shredded turkey or good quality turkey lunchmeat
1 avocado, sliced
2-3 roasted red bell peppers
Spinach or lettuce, torn
Sliced cheese or shredded cheddar cheese
Spread a generous amount of the chipotle spread onto the tortilla. Place a good portion of turkey onto the center of the tortilla. Top with avocado, peppers, lettuce, tomatoes and cheese. Roll up the tortilla as tightly as you can and serve. If you like your sandwich warm, put the spread, turkey and cheese on the tortilla and then warm in the microwave for 30-60 seconds, or until warm. Remove from the microwave and add the other ingredients to the wrap. Serve warm.
