Herbed Red Potatoes

One thing that has actually grown really well in our garden this year is red potatoes. The kids love to go up to the garden and go on a 'potato treasure hunt'. They are so fun to dig up and find all these beautiful, red potatoes under the soft dirt. With a little rinsing and this simple recipe, you can turn your red potatoes into a really flavorful and easy side dish. These potatoes go perfectly with our homemade meatloaf and any other main dish you can think of.

Simple Herbed Red Potatoes

10-12 red potatoes
1 packet Lipton Onion packet mix
2 Tbls. parsley
1 tsp. garlic powder
1/2 stick butter, melted

Rinse the potatoes and cut into one and a half inch pieces. Place on a cookie sheet and drizzle with the melted butter. Sprinkle the onion soup mix, parsley and garlic powder all over the potatoes and toss. Bake the potatoes at 425 for 20-30 minutes, or until golden brown and crisp. Serve warm.
