When I entered the grocery deals onto our website this week I was thrilled that many stores were having case lot deals again. And this time, it wasn't just stores in Utah that had case lots. Now, besides awesome case lot deals, there is a deal I wanted to share with you. This is the week to stock your freezer with chicken! Smith's grocery store is having their chicken for only $1.59/lb. Hello, that is awesome!?!?! Buy several extra pounds (I'm talking like 20-30-40 lbs. of chicken) and you will be so grateful for the next several months. Chicken won't get lower than this price, so this is the week to stock up.

Now that you know where to get the chicken, I want to share my NUMBER ONE favorite meal planning tip of all time. I have used this method for nearly 7 years now and it is my dinner-time LIFE saver!! Getting dinner on the table on those busy nights would not happen if it weren't for this trick.
Here it is. It's not tough. It's simple really. When you get home from the grocery store, put several pounds of chicken into your largest crock pot. Season the chicken with salt and pepper and turn the crock pot to high (or low) heat. Cook the chicken until it is tender, but not overly cooked. When it is cooked, place the chicken into freezer ziploc bags and place in the freezer. In each bag, put the amount of chicken breasts your family would normally use for a meal. These cooked, chicken breasts can be frozen for up to a year.
Or..take the extra chicken and grill it on an outdoor grill until cooked through. Season with salt and pepper and then remove from the grill once the chicken is cooked. When it is cooked, place several chicken breasts into a freezer bag as well. This grilled chicken is fabulous when it is thawed and can be thrown into salads, casseroles, in pasta dishes, on sandwiches, and really any way you normally use chicken. It is my favorite method of all time! The chicken is not mushy or overly cooked. It's texture remains perfect and great for future meals.
