{Flashback Friday} Pumpkin Waffles

I just realized it was the first day of fall a couple of days ago and I haven't even posted a pumpkin recipe yet. How dare I? When deciding what to post about first this fall, I thought I would share a 'Flashback Friday' recipe for our family's favorite Pumpkin Waffles. These waffles I have been making since I was a young girl and they continue to be one recipe all of my children love. They just happened to be my 14 year old sons request for his birthday breakfast this week. They are everything you love about fall pressed into one, delicious waffle! I hope you enjoy.

Pumpkin Waffles

3 eggs
1 pound can of pumpkin (15-16 oz. can)
¾ c. vegetable oil
½ c. water/beat together then add:
2 ½ c. flour (I like to use whole or half wheat flour)
1 2/3 c. sugar
1 ½ t. baking soda
1 ¼ t. salt
¾ t. nutmeg
¾ t. cinnamon

Beat all ingredients together. Spray waffle iron heavily with oil. Pour scoopfuls of the batter into the waffle maker. Serve with whipping cream and/or syrup.
