Best Ever Cheesy {Funeral} Potatoes you'll ever have!

Now, I'm not sure if Cheesy Funeral Potatoes are a Utah, Mormon thing, but I have to admit I'm a big fan! There is something about eating some delicious spiral ham with the cheesy, salty goodness of these potatoes. They really make a great side dish to any meat recipe you might be whipping up in your kitchen. Serve these potatoes with marinated chicken, a turkey, ham or any other recipe-or add some cubed ham into these potatoes and voila! You have a super quick meal. No matter how you choose to serve these cheesy potatoes you are going to love them!

And yes, if you are unfortunate enough to have to bring food to a funeral any time soon, please use this recipe. I have had my fair share of bad potato casseroles in my day, and there is no reason we all need to suffer--it is a funeral after all ;) Let's at least make the food taste good, right? ;)


Best Ever Cheesy {Funeral} Potatoes

1 cup sour cream
1 can cream of chicken soup
1/4 cup mayo
1/2 packet ranch dressing
1/2 stick butter, melted
1 tsp. salt
1/2 tsp. black pepper
24 oz. shredded hashbrowns
3 Tbs. green onions
1 cup mozzarella cheese
1 cup colby jack cheese
Breadcrumbs with parsley

In a bowl, combine the sour cream, cream of chicken soup, mayonnaise, melted butter and seasonings. Stir until combined. Spray a 9x13 pan with nonstick cooking spray. Pour the bag of frozen hash brown potatoes into the bowl with the sauce and stir until all of the potatoes are coated in the soup mixture. Add one cup of the mozzarella cheese into the potatoes, along with the green onions that have been sliced. Stir the potatoes and then spread them evenly into the 9x13 pan. Sprinkle on the top of the casserole the colby jack cheese. Top the cheese with the panko crumbs and the fresh parsley (or dried). Bake the casserole at 350 degrees with no covering for 25-30 minutes, or until the potatoes are tender and the top of the casserole is golden brown. Remove and let cool for a minute before serving. Makes a great side dish for any meal!
