Seeing as it's Mother's Day this weekend, I thought it would be the perfect time to share a recipe SO simple, your toddler could make it. These Cheesecake Shortcake Bites take less than 10 minutes to make and are super cute--not to mention delicious. The thing I love about this recipe is these are so light and fluffy--nothing heavy or too rich to follow a Mother's Day dinner. I'm not sure yet who's cooking for my Mother's Day, but I do know If I have to cook (ha!) I could definitely handle making these Shortcake Bites again. Hope you are having a great week!

Store bought angel shortcake cups (about 12-15)
Fresh berries of your choice
Cream Cheese Filling:
2 (8 oz.) cream cheese
8 oz. tub marshmallow cream
2-3 Tbs. powdered sugar, to taste
1 tsp. vanilla (I love using vanilla bean extract)
In a bowl, with an electric mixer, beat together the cream cheese until smooth. Then add the powdered sugar, vanilla and a dash of salt to the cream cheese and continue to beat until smooth. Add the marshmallow cream to the mixture and whip until smooth. Once the mixture is fluffy and soft, pipe the mixture into each of the shortcake cups. Top each cup with some fresh berries.
