Flashback Friday: Breaded Pork Chops with Apricot Glaze and Apricot Gorgonzola Chicken Salad

Since I started a theme of apricots this week (come back tomorrow for a deliciously refreshing Apricot Smoothie) I thought I would share two of my favorite apricot recipes we've shared on our blog. My favorite way to serve pork chops is breaded and dipped in this amazing Apricot Glaze. The combination of the sweet, savory and crunchy pork chops is perfection. I also wanted to share this recipe for Apricot Gorgonzola Chicken Salad. It is heavenly and a great, fresh, summer meal. Hope you love them both as much as we do!
