Flashback Friday: Grilled Peaches and Pineapple with Honey Lime Glaze


Before summer comes to an end (insert sobs!), I wanted to remind you of a really healthy, and simple dessert recipe I blogged about a couple years ago. When peaches are ripe, and on sale (yes, like this week--login to Deals to Meals to find out where), it is the perfect time to grill up some fresh fruit in your backyard. Drizzle your fruit with this honey lime glaze to amp up the flavors and make everything delicious. Serve this hot fruit with some vanilla ice cream and you have a dessert that's not only refreshing, but as delicious as it is pretty. Hope you have a wonderful weekend!



Grilled Fruit with Honey Lime Glaze

2-3 peaches, pits removed and cut in half
1 large pineapple, cored, skin removed and sliced into 1/2 inch thick pieces
1/2 cup honey
1/4 cup lime juice
2 Tbls. brown sugar
Dash salt

Prepare the fruit and place on a cookie sheet. In a bowl, whisk together the honey, lime juice, brown sugar and salt. If you need to heat the glaze in the microwave for 10-20 seconds to soften the honey. Use a pastry brush and brush the fruit with a thin layer of the glaze. Heat a grill to medium high heat. When the grill is hot, place the fruit on the grill face down. Let the fruit grill for 2-3 minutes, or until slight char marks are on the fruit. Turn the fruit over to the other side, brush with extra glaze and continue to cook another 3-5 minutes, or until tender. Remove fruit from the grill and serve warm with vanilla ice cream or just as a side dish to any meal.

*Calorie Counter: For one serving of this fruit is only 100 calories. Add a scoop of vanilla yogurt and you have a delicious dessert for under 200 calories. Not bad at all ;)
