Crusted Cinnamon French Toast
1/2 cup flour
1/4 cup sugar or real maple syrup
2 tsp. vanilla
1 tsp. cinnamon
1 cup milk or half & half
4 cups Honey Bunches of Oats Cereal, crushed
1 loaf of white or wheat bread
3 Tbs. butter
In a shallow bowl, whisk together the eggs, flour, sugar, salt, vanilla, cinnamon and milk until smooth. Once it's smooth, put the cereal into gallon ziploc bag and crush the cereal into smaller pieces (but not too fine). Place the crushed cereal into a separate shallow bowl. Heat a flat griddle pan to medium heat. Spread a small bit of butter on the bottom of the griddle (or spray with non-stick cooking spray). Take one piece of bread at a time and dip the bread into the egg mixture on both sides. Once the bread is wet, dip the bread into the crushed cereal on both sides. Try and shake off any excess cereal and then place the french toast onto the griddle. Cook the french toast on each side until golden brown, and until the egg mixture gets firm on the toast. Once it they are cooked, serve with fresh fruit, butter syrup or maple syrup.
