Lemon Poppyseed Muffins

Many stores this week have cake mixes on sale for LESS than $0.50 each! That's an amazing deal and a great time to stock up and buy your year supply. Who doesn't need cake mixes on hand for those quick and delicious desserts? I know I do!

I wanted to share a simple muffin recipe that uses a cake mix for a simple snack or dessert. You could always frost these muffins with some cream cheese lemon frosting, or just dust with powdered sugar. Either way, it's a simple recipe that's fun to have any time of year! Hope you enjoy :)


Lemon Poppyseed Muffins

1 lemon cake mix
3 eggs
1 cup water
¼ cup lemon juice
Zest of 1 lemon
1 package lemon instant pudding
1 Tbs. poppyseeds
½ cup sour cream
1/3 cup canola oil

In a bowl, whisk together the muffin ingredients until smooth. Place cupcake liners into a muffin tin. Spray with non stick cooking spray. Fill each muffin cup up ¾ of the way full. Bake at 350 for 15-18 minutes, or until the center of the cupcake is no longer wet and moist. Dust the top of the muffins with powdered sugar or frost with a cream cheese frosting if you want a sweeter treat.
