Flashback Friday: Gingerbread Pancakes

Before winter comes to an end (ha! not soon enough for me ;) I wanted to remind you of a winter-holiday favorite recipe of ours. I can't get enough of gingerbread flavors and think these pancakes would be well loved served up this weekend. Top them with whipped cream, bananas and your favorite maple syrup. You're going to love these! Enjoy :)

Gingerbread Pancakes

1 1/2 cup buttermilk or milk
1/2 cup molasses
1/4 cup brown sugar
2 eggs
4 Tbs. butter, melted
2 cups flour
1 tsp. baking soda
3/4 tsp. salt

In a mixing bowl, whisk together the buttermilk, molasses, brown sugar and eggs until smooth. Add the remaining ingredients and whisk until the flour is incorporated. 

Heat a griddle to medium heat. Spray with non-stick cooking spray. Pour a portion of the batter onto the griddle. Bake until the bottom side of the pancake is golden brown. Flip the pancake. Serve the pancakes with syrup, whipped cream and sliced bananas.
