Flashback Friday: Spicy Queso Dip

It has been so fun to spend the past couple months going through all of my recipes from the past 8 years. It's fun to see how my recipes, pictures and style has changed. It's also been fun to remember some of my favorite recipes that I haven't made for awhile. One of these is for this spicy queso dip I posted about several years ago. It's simple to make and is a crowd pleaser. We have some family parties this week and I'm excited to make this dip again. Not to mention, salsa, tortilla chips and cheese is also on sale. Bonus!

Spicy Queso Dip

1/4 cup flour
1/2 stick butter
8 oz. whipping cream
1 cup salsa
1 cup shredded colby jack cheese
Tortilla Chips
In a sauce pan, melt the butter on medium heat. Once the butter begins to melt, add the flour and whisk together until creamy and smooth. Continue to cook the roux and then add the whipping cream. Cook on medium-low heat until smooth and the sauce thickens. Add the salsa and shredded cheese. Continue to simmer on low heat until the cheese is melted. Season with salt and pepper if needed. If the sauce gets too thick, add a little milk or more salsa to thin out to your desired consistency. Serve with tortilla chips or pieces of bread.
