Orange Marmalade Bread

With all of the fresh oranges on sale these past couple weeks I was determined to make a homemade orange bread. I figured if bananas can have their own special bread, why not oranges? I like oranges much better than I do bananas, so I was determined to figure something out. We ended up experimenting and making SIX loaves of this bread and wouldn't stop until we had it just right.  This bread is moist, full of orange flavor and sweet, happy goodness. Orange Marmalade Bread

1 cup sugar
½ cup canola
2 eggs
½ cup orange marmalade
Zest of 2 oranges
¼ cup sour cream or greek yogurt
1 tsp. orange extract
1 ½ cup flour
1tsp baking osda
½ tsp. salt
1 tsp. baking powder

Glaze:
2 oranges
2 Tbs. buter

2-3 cups powdered sugar

Zest two oranges and juice the oranges. Add the zest into a large mixing bowl. Put the orange juice in a separate bowl. Cream together the sugar, oil, eggs, sour cream and vanilla together until smooth. Add the orange marmalade, zest of oranges, flour, baking soda, salt and baking powder. Mix just until combined. Spray two bread pans heavily with cooking spray. Cut a piece of parchment paper the width of the bread pan. Place the paper into bottom of the pan and up the two sides of the pan. (This will help your bread slide out easily). Divide the batter into the two loaves of bread. Bake at 350 for 50-60 minutes, or until the center of the bread comes out clean. 
While the bread is cooking, make the glaze.  To the bowl that the orange juice is in, add a couple tablespoons of melted butter.  Whisk together and then add enough powdered sugar to the glaze until smooth and the consistency of a glaze that can drizzle. 
When the bread is finished cooking, remove from the oven. Let the bread rest for 10 minutes and then remove from the pan. Let the bread rest on a cookie sheet until cooled. Drizzle the glaze over the bread and serve.
