I am excited to share a recipe with you today that is SUPER simple and one your whole family will love. I am a big fan of Cajun food and Cajun Chicken Pasta is one of my favorite dishes. This dish however can sometimes be filled with heavy cream, lots of cheese and be a little heavy for a weeknight meal. I decided to lighten up my original recipe and use items I already had in my food storage. Simple Cajun Chicken Pasta (on the lighter side)
Ingredients
  1. 2 Tbs. butter
  2. 1 red onion, diced
  3. 12 oz. pork or chicken sausage links
  4. 3 boneless skinless chicken breasts, diced
  5. 2 cans petite diced tomatoes
  6. 1 can evaporated milk (can use lowfat)
  7. 2-4 Tbs. fresh parsley, chopped
  8. 1 Tbs. cajun seasoning
  9. 1 lb. noodles of choice, can use whole grain
  10. 1 2 cup parmesan cheese, shredded

Instructions
  1. Dice the red onions into small pieces. In a large saute pan, add the butter and let it melt while you heat the pan. Once it's melted, add the onions and let simmer until tender. As the onions are cooking, slice the sausage links and dice the chicken into bite sized pieces. Add the chicken and sausage to the hot pan and cook until the chicken is golden and the sausage is browned. Once the chicken is mostly cooked, add the cans of tomatoes, the evaporated milk and the Cajun seasoning. While the sauce is cooking, cook the pasta of choice so it will be done once the sauce is finished. To finish the pasta, continue to simmer on low heat until the noodles are done and then garnish with lots of fresh parsley and parmesan cheese. Season with salt and pepper as needed.
