Maple Bacon Buttermilk Pancakes

I don't know about you, but to me, maple and bacon go together like two peas in a pod. I am a huge fan of salt and sweet flavors together, and these pancakes make for a breakfast your taste buds will love. There's nothing overly fancy about these pancakes but they sure are great! Hope you enjoy them too ;)



Maple Bacon Buttermilk Pancakes

2 cups buttermilk
2 eggs
4 Tbs. melted butter
3 Tbs. real maple syrup
1 tsp. vanilla
2 tsp. baking powder
1 cup white flour
1 cup wheat flour
3/4 tsp. baking soda
3/4 tsp. salt
1 lb. bacon

In a saute pan, place the pieces of bacon flat in the pan. Heat to medium heat and cook the bacon until golden and crispy on the bottom side. Flip the bacon pieces over and cook the other side until crispy. Remove the bacon from the pan and place on a paper towel to drain the excess grease.

In a mixing bowl, whisk together the buttermilk, eggs, melted butter, maple syrup and vanilla until smooth. Add the baking powder, white flour, wheat flour, baking soda and salt. Continue to whisk until the batter is just combined.

Crumble the bacon into small pieces. Add half of the bacon crumbles to the batter and mix and save the extras for the top of the pancake.

Cook the pancakes on a hot griddle until golden brown and cooked on both sides. When ready to serve, serve with pancake syrup and extra crumbles of bacon.
