Here I go with more Italian meals 😉 My brother in law is famous for his Homemade Gnocchi pasta and boy, is it good!! This is not a quick, weeknight meal, but if you are ambitious and want something delicious and different, this could be the meal for you. Make some homemade French bread and you have a gourmet meal! We serve our gnocchi with pesto cream sauce. You could serve these though with regular alfredo sauce or marinara sauce. Either way, they are creamy, smooth, and FABULOUS!!


Homemade Gnocchi
Ingredients
  1. Homemade Gnocchi Pasta
  2. 2-3 large Russet potatoes (3 lbs)
  3. 2 c. flour, approximate
  4. 1 egg (or two if smaller eggs)
  5. ½ t. salt
  6. 2 T. parmesan cheese

Instructions
  1. Boil potatoes 45 minutes or cook in microwave until well done. Potatoes should be well cooked to have a dry texture not sticky. Slice cooked potatoes in half. Using a fork, grate down the center of the potatoes to create little pieces. Or use a potato ricer. Make a well in center of potatoes. Sprinkle flour all over potatoes using all of the flour. Place the egg and salt in the center of the well. Using a fork, stir the egg and salt together slowly incorporating the flour and potatoes. Once center mixture is mixed with some potatoes and flour continue to knead the remaining potato flour mixture. Knead for 4 minutes. Once all is incorporated the dough should appear as bread dough and very soft in texture. Over kneading can make dough tough. Take baseball size portions from dough, to create snakes. Roll dough into tubes until ¾ inch thick. Cut pieces into 1 inch pieces. Using a fork, place the 1 inch piece at the top of the fork, while pushing gently with your thumb down the fork. This creates texture on the pasta to hold the sauce. Boil a large pan of water seasoned heavily with ¼ c. salt or more. Gnocchi is done cooking when it floats to the top of the water. Place straight into an ice bath to immediately stop cooking. To store extra cooked Gnocchi, cover with olive oil and refrigerate. Serve pasta with pesto cream sauce, or any favorite red sauce.

Pesto Alfredo Sauce
Ingredients
  1. 2 c. heavy cream (or half & half)
  2. ½ c. butter
  3. 2T-4T pesto
  4. 1/2 tsp. garlic powder
  5. ½ c. parmesan cheese
  6. Salt and pepper to taste

Instructions
  1. Melt butter on low heat. Add heavy cream and seasonings. Add parmesan cheese and pesto once cream is heated. Continue to heat on low until cheese is thoroughly melted and sauce thickens. If your sauce is not thick enough you can add a couple tablespoons of flour.
