Happy New Year! Can you believe it is going to be 2011? Where does the time go!

Now that Christmas is over we have had a few days of less goodies and treats, so I am ready for this weekend to come! Every year we have friends and family over to our house for an appetizer/game night. There are few dinners I love more than an appetizer dinner. Everyone that comes is asked to bring an appetizer and then a munchie/treat to share while we play games. There ends up being so much delicious food it is hard to know which ones are my favorites. However..I think I have narrowed my favorite appetizers down to Stuffed Mushrooms, Coconut Shrimp, our ‘mock’ Awesome Blossom with Dipping Sauce, Loaded French Bread, Italian Nachos, and Jalapeno Jelly with crackers and cream cheese. I feel myself gaining weight just talking about these appetizers. I have shared the recipe for Coconut Shrimp in the past (although I think I like this Panko & Coconut recipe better), as well as the Loaded French Bread. Today I will share with you my all-time favorite Stuffed Mushroom recipe. For those who have a problem with mushrooms, give this recipe another try! They are buttery, creamy, salty, and just plain fabulous!!

 

Stuffed Mushrooms
Ingredients
  1. 1 lb. button white mushrooms (the larger the better)
  2. 1 lb. hot/spicy ground pork sausage (Jimmy Dean is my favorite)
  3. 1/2 small white onion, chopped fine
  4. 1 stalk green onions, sliced
  5. 1 (8oz.) cream cheese, softened 1 t. garlic powder
  6. 2 t. parsley
  7. Salt and pepper to taste Breadcrumbs
  8. 2 T. butter

Instructions
  1. Brown sausage & onions until cooked through. Drain any excess grease. Season with garlic powder, parsley, salt & pepper. Put in cream cheese and cooked sausage & onions in a food processor and blend until all items are incorporated. Set aside. Place mushrooms in a 9x13 pan with 2 T. water in pan and microwave for 2-3 minutes to tenderize mushrooms. Drain all of the water out of the 9x13 pan and fill mushrooms with a large spoonful of cream/sausage filling. Top with a sprinkling of bread crumbs. Melt 2 T. butter and pour on the bottom of the pan around mushrooms. Bake or broil until brown and warmed through.
  2. Below is the recipe I have found for the Awesome Blossom dipping sauce from Chili's. It is pretty darn close if I do say so myself! Try this dipping sauce with homemade onion rings, fries, chicken fingers, etc. If you don't have the contraption to make your own awesome blossoms, just cut the onions into rings, batter them and then fry them. The taste will be the same, it will just be in a different shape. Either way, they are the perfect appetizer. Enjoy 😉

Awesome Blossom Dipping Sauce
Ingredients
  1. 1/2 C. Sour Cream
  2. 1 T. mayonnaise (heaping)
  3. 1 t. white vinegar
  4. 3 Tbsp. Ketchup
  5. 1/2-1 tsp. McCormick Seasoned Salt (taste to see if it needs more salt after 1/2 t.)
  6. 1/8 tsp. Red Pepper
  7. 1/2 t. garlic powder
  8. 1 1/2 tsp. Fresh Horseradish
  9. 1/4 tsp. Paprika
  10. 1/4 tsp. Paprika (garnish)
Add ingredients to shopping list

Instructions
  1. Mix all together and serve in the middle of the onion blossom. Garnish with paprika and just a dash of red pepper.
