One of the best ways to incorporate brown rice into your diet, especially if your family isn’t sure they like the texture of brown rice in meals, is to grind it into flour. If you have an electric wheat grinder it should be able to grind brown rice into a flour. Brown rice flour if bought at the grocery store is extremely expensive! Make your own at home for a fraction of the cost.

 Brown rice flour can be added to nearly every recipe that wheat or white flour is called for. The only recipes that you can not use all brown rice flour in, is in yeast breads. There is no gluten in brown rice and so your bread will not be able to rise like normal wheat bread would. I like to add brown rice flour however to muffins, pancakes, and small portions of it to my yeast bread. I was playing around and wanted a cinnamon bread and came up with this recipe for Apple Cinnamon Bread that uses brown rice flour. I loved the texture, it was dense, hearty, sweet and was amazing with the Whipped Apple Butter that I came up with. This was the perfect treat for us this weekend! We didn’t have any bread left, but I think if we did it would have made fabulous french toast! Enjoy 🙂

Apple Bread with Apple Cinnamon Butter
Apple Cinnamon Bread
  1. 3 1/2 c. hot water
  2. 2/3 c. vital wheat gluten
  3. 1 1/4 c. white sugar
  4. 3 T. yeast
  5. 3 T. lemon juice
  6. 1 c. applesauce
  7. 1 1/2 c. grated apples (about 2 large apples)
  8. 1 T. cinnamon
  9. 1 t. nutmeg
  10. 2 T. salt
  11. 2 T. canola oil
  12. 3 c. brown rice flour
  13. 3 c. oat flour (or wheat flour)
  14. 6-7 c. white all purpose flour (or more wheat flour)
Whipped Apple Cinnamon Butter
  1. 1 (8oz.) cube cream cheese
  2. 1 stick/cube butter
  3. 1 t. vanilla
  4. 1/2 c. apple pie filling
  5. 1/2 t. salt
  6. 2 T. brown sugar
  7. 1 jar marshmallow cream
  8. 1 t. cinnamon

Instructions
  1. Mix the first five ingredients together in a large mixing bowl and let sit for 5-10 minutes until the yeast begins to foam. Add the remaining ingredients (applesauce, grated apples, cinnamon).
  2. Knead dough together for 5 minutes and then let rest for 20-30 minutes until the dough begins to grow. Once the dough has begun to grow, pour the dough out onto a greased counter top. Cut the dough into four equal parts. Roll the four dough balls and place them in greased bread pans. Place them in the oven on the middle rack that has been turned to 170 degrees. Let the bread rise to the top of the pan (about 20-40 min. depending on the size of your loaves) and then turn oven to 350 and bake for 25-30 minutes (do NOT open the oven door or your bread may sink).
Whipped Apple Cinnamon Butter
  1. Cream together the butter, cream cheese, vanilla, brown sugar and salt until light and fluffy. Add the pie filling to the butter and mix together. Fold or beat in the marshmallow cream until butter is airy and whipped. Serve apple butter over warm bread. Delicious!!
