One of the best ways to incorporate brown rice into your diet, especially if your family isn’t sure they like the texture of brown rice in meals, is to grind it into flour. If you have an electric wheat grinder it should be able to grind brown rice into a flour. Brown rice flour if bought at the grocery store is extremely expensive! Make your own at home for a fraction of the cost.


- 3 1/2 c. hot water
- 2/3 c. vital wheat gluten
- 1 1/4 c. white sugar
- 3 T. yeast
- 3 T. lemon juice
- 1 c. applesauce
- 1 1/2 c. grated apples (about 2 large apples)
- 1 T. cinnamon
- 1 t. nutmeg
- 2 T. salt
- 2 T. canola oil
- 3 c. brown rice flour
- 3 c. oat flour (or wheat flour)
- 6-7 c. white all purpose flour (or more wheat flour)
- 1 (8oz.) cube cream cheese
- 1 stick/cube butter
- 1 t. vanilla
- 1/2 c. apple pie filling
- 1/2 t. salt
- 2 T. brown sugar
- 1 jar marshmallow cream
- 1 t. cinnamon
- Mix the first five ingredients together in a large mixing bowl and let sit for 5-10 minutes until the yeast begins to foam. Add the remaining ingredients (applesauce, grated apples, cinnamon).
- Knead dough together for 5 minutes and then let rest for 20-30 minutes until the dough begins to grow. Once the dough has begun to grow, pour the dough out onto a greased counter top. Cut the dough into four equal parts. Roll the four dough balls and place them in greased bread pans. Place them in the oven on the middle rack that has been turned to 170 degrees. Let the bread rise to the top of the pan (about 20-40 min. depending on the size of your loaves) and then turn oven to 350 and bake for 25-30 minutes (do NOT open the oven door or your bread may sink).
- Cream together the butter, cream cheese, vanilla, brown sugar and salt until light and fluffy. Add the pie filling to the butter and mix together. Fold or beat in the marshmallow cream until butter is airy and whipped. Serve apple butter over warm bread. Delicious!!
