I am excited to share my first pasta recipe with you for the month (sorry it is a little late!). This salad is perfect for any of your barbecues this summer (or anytime) because it makes a large bowl and is a filling salad with meat, vegetables and lots of yummy pasta. I love to make this alad with fresh tomatoes, cucumbers and peppers from our garden–they can’t grow fast enough. The dressing for this salad is perfect with our homemade Italian Seasoning Mix and has a nice sweet and sour kick. Whether you serve this salad as a side dish, or as a main dish, it is perfect for those hot nights you don’t want to turn on the oven. Enjoy!

Italian Pasta Salad
Ingredients
  1. 2 tomatoes, diced
  2. 1/2 can olives, sliced
  3. 3 stalks green onions, sliced
  4. 1 large cucumber, sliced
  5. 1/2 green bell pepper, diced
  6. 3 ounces salami, sliced
  7. 16 ounces pasta
Dressing
  1. 1/3 c. olive oil
  2. 1/3 c. red vinegar
  3. 3 T. balsamic vinegar
  4. 1/2 t. sugar
  5. 1/4 c. Parmesan cheese
  6. Salt and pepper to taste

Instructions
  1. Cook the pasta until al dente, drain and rinse with warm water. Pour pasta into a large bowl. Cut and dice all of the vegetables and add to the pasta. Prepare the dressing by whisking together all of the dressing ingredients together until blended. Pour half of the dressing on to the pasta when it is finished cooking and the vegetables are chopped. Add the rest of the dressing to the salad right before serving. Don't add all at once or the salad will become too dry once it sits for awhile. Serve salad cold or slightly warm.
