I can’t believe it has been one year already since we had our sweet baby Blake. Where does the time go? It is strange to think that my little baby, and most likely my last baby, is now a waddling toddler. I can’t think too hard about that or it will make me cry. I miss those days when he would snuggle on my lap and cuddle with me. Now all he can think about is how to get down so he can walk along all of the furniture. I knew that day would come, I just can’t believe it’s here already….boohoo! Here he is in his favorite place. He loves to hold on to the French doors by the front door and stand and watch the kids play outside. He doesn’t dare go down the porch stairs yet, so he just stands there and squawks at the the kids in the circle. It’s pretty cute.

Now..what cake did I choose to make? Last year I experimented with this recipe and it is now quickly a favorite cake of mine in the summer. When our peaches are ripe on our tree I love to make this cake for all of our summer get togethers. It is light, airy, moist and full of peach flavor. I only had Walmart peaches today, but it was still a special treat for a special day!

*Quick tip: If you don’t have the time to make the mousse, you can just use whipping cream or Cool Whip. It won’t be quite the same, but it will still be awesome.


- Cake: 1 vanilla cake mix
- 1 c. mashed peaches and peach juice
- 1 c. fresh peaches, diced
- 3 eggs
- 1/4 c. butter, melted
- 1 c. boiling water
- 1 small package peach jello
- 4 T. boiling water
- 2 t. gelatin powder (1 packet Knox brand)
- 2 t. cold water
- 1 c. heavy whipping cream
- 1/3 c. white sugar
- 1/2 t. vanilla
- 1/2 c. white chocolate chips or almond bark, melted in a microwave safe bowl (you need to use a good quality chip--I used Guittard and it worked perfectly)
- Dissolve the jello packet and the boiling water together and when the cake comes out of the oven poke all over with a fork. Pour the jello water all over the cake evenly and place in the fridge until ready to frost and until it is completely cooled.
- Mousse: Dissolve the gelatin powder with the 2 t. cold water and let sit for 1 minute. In a bowl, microwave the 4 T. water for a couple minutes until water is very hot or boiling. After one minute, add the hot water into the gelatin mixture and stir. Let sit again for a few minutes until ready with the rest of the recipe.
- Whip together the whipping cream, sugar and vanilla until medium peaks form. Add the melted chocolate and gelatin mixture and continue to beat until firm peaks form. Place mousse in the fridge until ready to frost the cake. When the cake is cool, spread the mousse over the cake. Top with fresh peaches and keep in the fridge until ready to serve. This cake is best served cold.
I made this cake for Father's Day and had trouble with the mousse. I followed the directions exactly. However, after I added the chocolate and gelatin mixture it just died. It looked ok for a second, but instead of firming up smooth as the whipping cream, it gelled up into a cottage cheese looking mess. It tasted alright, but the texture was off and looked awful. I don't know what could have gone wrong, I never deviated from the recipe.
Oh no! I am SOOO sorry! That is awful. I have made this several times and I didn't have that problem. This last time I made it I added the chocolate chips and I wonder if you have the melted chips too hot if it ruins the texture or it. Whipping cream has so many different peak levels too-soft peak, stiff peak, etc., that could make this tricky. I will have to make it again and double check the amounts and procedures. For the mean time, just use real whipping cream and add a little sugar to make a fool proof cake. We will work on the mousse portion of the cake again until we have it just right. Sorry! I hate when that happens 😉
Made this for Fathers Day and everyone LOVED it!! So light and yummy. I had trouble with the topping as well. I think it was the gelatin, so I made it again and left that out and it was really good. I will for sure make this again. Thanks for sharing.
