My favorite type of meal in the summer is a piece of marinated meat with fresh vegetables from the garden. It is so fresh, quick and easy to prepare. In the summer heat, I am not intersted in slaving over the stove all day…shocking, I know! I want a meal that I can throw together without a lot of effort. Summer is the time for pork chops to go on sale for great prices, so this marinade for pork is one my mom found and I am in love! The marinade is very basic, but gives a LOT of flavor to the pork or chicken that you are marinading. I like to marinate this pork overnight to give it a lot of flavor! The three tablespoons of lemon pepper seems like too much, but it actually gives just the right amount of flavor. If you want a new summer marinade, give this one a try..it is delicious!


- 1/2 c. water
- 1/3 c. soy sauce
- 1/4 c. vegetable oil
- 3 T. lemon pepper seasoning
- 2 garlic cloves, minced
- 6 boneless pork chops
- In a deep bowl mix all marinade ingredients together. Place the pork chops in a Ziploc bag or a bowl and pour marinade on top of pork chops. Marinate at least 2 hours. Remove from marinade and cook over medium-high heat on greased grill for no more than 15 minutes or until done. Cooking time for second side is shorter by 1-2 minutes. 3/4" or thinner, 5-6 minutes maximum per side, thicker than 3/4" 6-7 minutes maximum per side. DO NOT OVER-GRILL, chops will become tough. After 2 minutes grilling on a side, rotate chops 45 degrees for even cooking. Turn over when juices pool on upper surface and meat appears to be cooked half-way through.


- 2 T. butter or olive oil
- 1/2 white or yellow onion, sliced
- 2 cloves garlic, minced
- 3 medium zucchini, sliced thin
- 2 yellow squash, sliced thin
- 2-3 tomatoes, diced (or use grape tomatoes)
- 1 c. frozen or canned corn
- Salt, pepper & parsley to taste (about 1/2 t. of each)
- 1/4 c. shredded colby or cheddar cheese
- In a large saute pan, begin to melt the butter. Add the sliced onions and saute until golden brown. Add the squash and continue to saute until the squash is tender. Add the canned corn, tomatoes and garlic. Saute until tomatoes are soft, but not mushy. Season with salt, pepper and parsley. Before serving, sprinkle with shredded cheese and continue to keep warm until ready to serve.
Amazingly delicious food. So yummy. Mmmmmmm
