To stick with my theme lately of orange and cranberry I thought I would share this easy muffin recipe with you. I don’t think any recipe this year will beat the Cranberry Orange Bread Pudding, but if you need a festive muffin for the holidays, these muffins would be perfect. They are just sweet enough, just sour enough and the extra strudel on top makes these muffins a delightful breakfast side or snack. Happy Holidays!
Orange Cranberry Muffins
1/2 c. orange juice concentrate
3/4 c. sugar
Zest of one orange
1/2 c. craisins
1 c. fresh cranberries, slightly chopped
3 eggs
2/3 c. oil
1 2/3 c. milk
1 T. baking powder
1 1/2 t. baking soda
1 t. salt
1/4 c. sour cream
4 c. flour
Mix together all of the items except for the flour until smooth.
Orange Streusel
1/2 stick butter
1 T. fresh orange juice
1 t. orange zest
2/3 c. flour
Pinch of salt
1/2 c. white sugar
Slightly melt butter and add the orange juice, zest, flour, salt and sugar. Mix together until crumbly. Sprinkle small pieces of the streusel over the uncooked muffins. Bake muffins at 350 for 10-12 minutes, or until muffins are slightly golden.
Could these be made with whole wheat rather than white flour?
I would try half & half wheat flour and white. Whole wheat might not be so great 😉 Enjoy!
I just made these and they were GREAT!! I used 100% soft white wheat (whole wheat pastry flour) and buttermilk instead of fresh milk. They're very soft and moist, sweet but not too sweet. These are going into my regular muffin rotation for sure! I was also thinking that adding a small amount of chopped white chocolate and maybe some chopped Macadamia nuts might be Crazy Good too…
