Do you ever get bored with steamed vegetables as your stand-by side dish? The other night I was about to steam some broccoli for dinner and decided I would spruce up our side dish with a little cheese and flavor. Of course, butter and cheese will always make everything taste better. This may not go along with your new year’s resolutions, but if you want to add a little pizazz to your broccoli, this is definitely on my new side dish rotation. The other great thing about this recipe is it uses Magic Mix which uses up the powdered milk in your food storage. I love having Magic Mix in my fridge to whip together alfredo sauce, cream soups, puddings and MUCH more. (I served this with our homemade Country Fried Chicken, Buttermilk Biscuits and Mashed Potatoes..YUM!)

Cheesy Broccoli Bake
  1. 3/4 cup magic mix
  2. 1 cup water (or milk for an extra creamy sauce)
  3. 1 cup shredded cheese (cheddar or mozzarella works great)
  4. 1/2 tsp. salt (may need a little more when serving)
  5. 1/2 tsp. garlic powder (or one clove fresh minced garlic)
  6. 1/2 tsp. black pepper
  7. 1 tsp. Dijon mustard
  8. 3 small bunches broccoli (about 1 1/2-2 lbs.), rinsed and cut into large pieces
  9. 1 cup seasoned bread crumbs
  10. 2 Tbs. butter

  1. Rinse and cut the broccoli. Place it in a saute pan with a few tablespoons of water. Place the lid over the broccoli and turn the stove to medium heat. Let the broccoli steam for 3-5 minutes, or until broccoli is a bright green color (don't over cook). Drain the broccoli water and place the broccoli in the bottom of a 9x13 dish. In the same pan you steamed the broccoli in, add the magic mix and water together. Turn heat to medium low and whisk the sauce together until creamy and it begins to thicken. Once the sauce starts to thicken, add the shredded cheese, Dijon mustard, salt, pepper and garlic powder. Stir the cheese in to the sauce until it is melted. Pour the thick cheese sauce over the steamed broccoli (sauce will be fairly thick, if you need to thin it out to pour better over the broccoli, just add a little more milk). In a bowl microwave the 2 T. of butter until melted. Add the breadcrumbs to the melted butter and sprinkle over the top of the broccoli. Bake the broccoli at 350 for 10-15 minutes, or until the cheese is melted and the crumbs are nicely golden brown. Serve warm out of the oven.
