Sandwiches are a HUGE hit at my house in the summer. I love not having the oven on all day or having to prep dinner. These sandwiches are one of our favorites and the combination of the spicy peppers and the sweet apples makes for an incredible flavor!  I know they sound strange, but give them a try, you will pleasantly surprised!
 
Turkey Green Chili Melts
Ingredients
  1. 1 lb. sliced deli turkey
  2. 6 slices Swiss cheese
  3. 2 green apples, sliced very thin
  4. 6 canned sliced green chilies
  5. 1/2 c. mayo + 2 T. pesto (mix together and spread over the sandwiches)--I love the pesto from Costco and I freeze it in small containers for different pesto dishes for later in the month
  6. 6 hoagie buns

Instructions
  1. Mix together the mayo and pesto and spread on both sides of each bun. Place on a cookie sheet and then add slices of turkey to one side of the bun. Place 2-3 thin slices of apples on top of the turkey. Open the can of green chiles and place a pepper on top of the apples. Place a slice of provolone cheese on top of the pepper. Do this to each of the sandwiches and then place the cookie sheet on the bottom rack of your oven. Place in the oven on broil for 3-5 minutes or until the cheese is melted.  When done, place the top of the bun on the sandwich and serve warm.
