I am sure each of you are running around crazy trying to finalize last minute Thanksgiving plans, like I am. However, I would like to share one last recipe with you that would be great with any of your holiday breakfast plans or served as a snack or dessert. These muffins are over the top because of the chocolate nut crunch topping. They turn these pumpkin muffins into something special.  I added some wheat flour to these muffins to help add a little more nutrients, so I wouldn’t feel so guilty feeding these to my kids (and eating so many myself!). Pumpkin Chocolate Chip Muffins with Toffee Crunch Topping
Muffins
  1. 3 1/3 cup flour (I used 1/2 white flour and 1/2 wheat flour and it was delicious!)
  2. 1 tsp. allspice
  3. 1 Tbs. cinnamon
  4. 2 tsp. baking soda
  5. 1 tsp. baking powder
  6. 1 1/2 tsp. salt
  7. 1 1/4 cup sugar
  8. 2/3 cup butter, softened
  9. 4 eggs
  10. 29-30 oz. can pureed pumpkin
  11. 2/3 cup water
  12. 1 cup chocolate chips + 2 Tbs. flour
Topping
  1. 1/2 cup brown sugar
  2. 1/2 cup chopped almonds or pecans
  3. 1/2 cup semi sweet milk chocolate
  4. 1/2 cup milk chocolate
  5. 1/2 tsp. cinnamon

Instructions
  1. Preheat the oven to 325 degrees. In a large bowl, mix together the softened butter and sugar. Blend until smooth. Add the eggs and pumpkin and continue to mix until smooth. Add the flour, spices, soda, powder and water. In a separate small bowl, combine the chocolate chips and 2 T. of flour. Mix until the chips are coated and then pour into the muffin batter. Mix the chocolate chips into the batter. Place muffin wrappers into your muffin tins and pour 1/4 c. of the batter into each portion. For the topping, combine the ingredients together. Sprinkle 2 t. of the topping on to the top of each pumpkin muffin. Bake for 25-30 minutes, or until the muffin center is cooked through and a toothpick comes out clean. Recipe makes 36 muffins.
  2. *You can also put this batter in a bread pan that has been greased and floured. Sprinkle the top of the bread with the topping and then bake for 50-60 minutes, or until center is cooked through.
