This time of year I am always on the look out for simple, and tasty recipes I can bring to family gatherings. My aunt gave me this recipe for Banana Crunch Cake and we all LOVED it! It is sweet, moist, flavorful and full of buttery goodness. The layers of the crunch between the moist cake was a perfect combination. Top with a dallop of whipping cream and you have a festive fall dessert that will please all of your family & friends!


- 1 cup coconut
- 1 cup oatmeal
- 1/2 cup chopped nuts
- 1/2 cu[ butter, melted
- 1 1/2 cup brown sugar
- 1/2 cup flour
- 1 yellow cake mix
- 4 eggs
- 1/2 cup sour cream
- 1 1/2 cups mashed bananas, approx 3 bananas
- In a sprayed 9x13 baking dish layer 1/3 of the crunch mixture on the bottom followed with 1/2 of the cake batter then another 1/3 of the crunch then the remaining cake batter and finally top with the remaining crunch mixture. Bake at 350 for 50-55 minutes, or until light golden brown and cooked thoroughly.

Wondering do you end up using the whole cake mix in layering it or only 1/2 cake mix?
