One of my favorite restaurants is Texas Road House. There food is great, but my favorite part of going there is to get their Loaded Sweet Potato. I have always been a huge fan of sweet potatoes, but there is something about smothering it in caramel and marshmallows that just makes me happy. Give me a sweet potato any day over a baked potato. The fact it’s covered in sugar and butter, I guess that would be a no brainer for me! The great thing is, these Loaded Sweet Potatoes are super simple to make from home. So, grill up a good steak and serve with these sweet potatoes and you have a meal better than any restaurant!

Texas Road House Smothered Sweet Potatoes
Ingredients
  1. 1 yam or sweet potato per person
  2. Olive oil
  3. Tinfoil
  4. Caramel or butter syrup
Butter syrup
  1. 1 stick butter
  2. 1 cup brown sugar
  3. 1 tsp. vanilla
  4. 1/4-1/2 cup evaporated milk
  5. Cinnamon Butter
  6. Mini Marshmallows
  7. Pecans, chopped

Instructions
  1. Tear squares of tinfoil and place on the counter. Wash and scrub the yams/sweet potatoes and place one on each tinfoil square. Drizzle each with just a few drops of olive oil and spread the oil around each potato. Poke each yam with a fork twice and then roll the yam up with the tinfoil (not letting any portion of the yam show). Place the yams in the oven at 350 for 40-60 minutes, or until they are fork tender. Once they are cooked through, remove them from the oven and pull down the sides of the tinfoil. Slice the center of the yam and pull open to form an opening down the center of the yam.
  2. You can buy store bought caramel or make butter syrup. Butter syrup is easy to make by bringing 1 stick butter and 1 cup brown sugar to a boil for 6-8 minutes, or until sugar is dissolved. Once sugar is dissolved, add 1 tsp. vanilla and 1/4-1/2 cup evaporated milk.
  3. Prepare the cinnamon butter (or you can skip this step--I did and I felt it wasn't missing anything).
  4. Drizzle some caramel (or butter syrup) into the bottom of the center of the yam. Place 1/2-3/4 c. mini marshmallows into the center. Drizzle with more caramel on top, sprinkle with a little salt and top with a few crushed pecans (optional). Place the opened yam (with toppings) back into the oven on broil for 1-2 minutes, or until the marshmallows are lightly golden brown. Serve yams warm.
