Yesterday I posted a simple and delicious recipe for Marinated Pineapple Chicken. By using a portion of the reserved marinade you can transform everyday vegetables into an amazing side dish! Grill these vegetables and fresh pineapple on the grill and you have a recipe your family will love all summer long!
 

Marinated Vegetable Kabobs
Ingredients
  1. 6-8 skewers (if using bamboo skewers soak in water for 30 minutes prior to grilling to prevent burning)
  2. 1 orange bell pepper
  3. 1 yellow bell pepper
  4. 1 red bell pepper
  5. 1 medium red onion cut into half and then into thirds
  6. 12 ounces button mushrooms
  7. 1 pineapple cut into 1 inch square chunks
  8. 1/2 cup reserved pineapple marinade

Instructions
  1. Using a pattern of your choosing thread vegetables and pineapple onto skewers
