Last week I posted several recipes that I love that feature the delicious mango fruit. I wanted to share one more amazing mango recipe that is sure to be a hit on your summer menu plan. I love salads in the summer because they require no cooking and help me keep the house cool and dinner gets on the table quick. I use the grilled and frozen chicken I keep in my freezer (a MUST for quick dinner prep) and this salad can come together in just a few minutes. The sweet sesame dressing is great with any fresh produce you have in your fridge needing to be used up. You may even have cucumbers, peppers and lettuce growing in your garden, this is a great way to use those too 🙂 Hope you are having a wonderful summer!


- 1 head lettuce, chopped
- 1-2 mangos, cubed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- Chinese Noodles
- 1 avocado, diced
- 1 cucumber, diced
- 2-3 boneless skinless chicken breasts, grilled (cooked), seasoned and diced
- 1 cup oil
- 1 cup sugar
- 1/4 cup soy sauce
- 1 tsp. salt
- 1 cup rice vinegar
- 2 tsp. sesame oil
- 2 garlic cloves, minced
- 2 tsp. sesame seeds
- Grill or saute the chicken until cooked through. Season with salt & pepper. Dice cooked chicken into bite size pieces and set aside. Chop the lettuce and place in a large salad bowl. Dice the mangos, red bell pepper, green bell pepper, avocado, and cucumber and place on the top of the salad. For the dressing, place the ingredients in a bowl or blender and whisk together until combined and emulsified. Once the dressing is blended, add the sesame seeds. Place the cooked chicken on top of the salad and sprinkle the Chinese noodles on top. When serving the salad, place a cup of cooked rice on the bottom of the plate. Top with the salad and drizzle with the dressing when ready to serve.
