What’s not a better meal to serve on a busy night than pancakes? Our go-to meal when I am not wanting to make a ‘real’ dinner is pancakes. Now, we have on this blog many amazing pancake recipes, if I do say so myself 😉 In fact, I dare say we have some of the best pancake recipes on the block. I love Krusteaz and all, but when I want a pancake, I want some flavor…and some butter syrup of course 😉

Let me tell you, these Peach Pancakes are pretty much pancake heaven. They are soft, spongy and smothered in this rich, buttery peach syrup. The whole combination is so fresh, light and fluffy. We made these for dinner the other night and every family member was raving about these for days. It’s been nearly a week and my kids still wake up every day and ask if I can make them again. I bought peaches today so tomorrow I can make up another batch. Deeelish! Pick up some fresh peaches and you will have a breakfast (or dinner) you will never forget!

Peach Pancakes
Peach Puree
  1. 3 fresh peaches, skins and pit removed
  2. 1/4 cup lemon juice
Pancake Batter
  1. 1 cup peach puree (from above)
  2. 1 1/2 cup milk
  3. 1/2 cup sugar
  4. 1/4 cup butter, melted
  5. 1 cup sour cream
  6. 3 tsp. baking powder
  7. 2 tsp. baking soda
  8. 3 tsp. vanilla
  9. 6 eggs
  10. 1 1/2 cup wheat flour
  11. 2 1/2-3 cup white flour
Peach Syrup
  1. 3/4 cup peach puree (the rest of the puree minus the 1 cup for the batter)
  2. 1 stick butter
  3. 1 cup sugar
  4. 1/2 cup sour cream
  5. 1 tsp. vanilla

  1. For the puree, place the peeled peaches and lemon juice in a blender and blend (or mash) until mostly smooth. Set aside.
  2. Place the peach puree, milk, sugar, butter and sour cream together in a bowl and whisk until smooth. Add the remaining ingredients and mix the batter until combined. Heat a hot griddle or pan, spray with butter spray and pour 1/2 cup of batter onto the pan. Cook on both sides until light golden brown and top with the peach syrup and extra fresh peaches.
Peach Syrup
  1. Place more of the peach puree, the butter and sugar together in a saucepan. Bring to a low boil and let boil for 1-2 minutes or until the sugar is completely dissolved. Once the mixture has been boiling for a few minutes, add the sour cream and vanilla. Lower heat and let simmer until sour cream is combined and melted. Pour hot syrup over the pancakes.
