You would think with it being Monday I should post about something healthy and low in calories for the beginning of a new week. However, once I start my “no sugar for the weekday diet” I tend to only think about the goodies I had over the weekend, and that I want to make over the upcoming weekend. It’s no wonder my diet doesn’t work 🙂 Well, this dessert is one of those I can’t get out of my mind. It is everything I love about a homemade batch of goodness. It is buttery, rich and covered in chocolate. I love a good old fashioned brownie, but a blondie is the next best thing. Basically a blondie is a brownie minus the cocoa powder. Now don’t worry, these blondies are not lacking in chocolate goodness. The chocolate chips on top, along with the pecans and coconut make for an awesome combination! If you want to switch up your brownie dessert routine, these blondie bites are sure to be a hit–weekday or weekend 😉

Triple Chocolate Blondie Bites
  1. 4 sticks butter
  2. 4 cups sugar
  3. 1 Tbls. vanilla
  4. 1 tsp. salt
  5. 8 eggs
  6. 4 cups flour
  1. 1 cup white chocolate chips
  2. 1 cup butterscotch chocolate chips
  3. 1 cup milk chocolate chips
  4. 1 cup coconut
  5. 1/2 cup pecans or cashews, chopped
  6. 1/2 cup brown sugar

  1. In a large bowl, beat together the butter, sugar, vanilla, salt and eggs until smooth. Then add the flour one cup at a time until the batter is mixed. Bake brownies in a greased cookie sheet for 20 minutes. Combine the topping ingredients together and then sprinkle evenly on the brownies that have been cooked for 20 minutes. Place the brownies back in the oven and bake for another 15-18 minutes. Let blondies cool and then cut into squares.
