The one thing that is growing really well in my garden this year is grape tomatoes. I have a gazillion grape tomatoes and very few regular size ones. I have had a hard time thinking of new ways to use these sweet, plump, bite sized babies. That is however, until my sister introduced me to this new salad recipe. The name sounds fancy, but I promise this salad can be thrown together with everything you already have in your fridge.This salad has become the new favorite salad recipe of the summer. It has been requested every time we’ve gotten together the past few months. The dressing is super simple yet full of huge flavor. The fresh garlic is really what makes this dressing, so stick with the real stuff on this one. If you want a new and delicious side salad, or main dish salad, the French have this salad down to a science!


- 10 slices bacon, cooked and crumbled
- 2 heads romaine lettuce, sliced super thin
- 2 cups grape tomatoes, halved
- 1 cup grated Swiss cheese
- 2/3 cup toasted almonds
- 1/3 cup grated parmesan cheese
- 1 pkg. cheese and garlic croutons
- Juice of 1 lemon, about 3 Tbls.
- 3 cloves garlic, minced
- 1 tsp. salt
- 1/2 tsp. black pepper
- 3/4 cup vegetable oil
- Whisk the dressing ingredients together and let sit for at least one hour. When ready to serve, chop and prepare the salad ingredients and place in a large serving bowl. Make sure and slice the lettuce into thin ribbons. Place all of the salad ingredients together in a bowl. When ready to serve, drizzle the dressing all over the salad and toss. Serve immediately as lettuce will begin to wilt over time.
