Yesterday I posted a recipe for Citrus Grilled Shrimp and along with those kabobs I served this recipe for Mango rice. If you loved the Pineapple Rice Ellen posted a couple months ago, this Mango Rice has the same great flavor. The sweet mango goes perfectly with the lime and cilantro. The other great aspect to this recipe is you can make it almost as quickly as you can a box of Rice Roni. With a little chopping of vegetables you throw it all together and you have an amazing and flavorful side dish. Enjoy 🙂

- 1/2 stick butter
- 1 onion, minced
- 2 T. marinade
- Juice and zest of 1 lime
- 1 1/2 cups rice
- 2 1/2 cup water
- 2 tsp. sugar (optional)
- Salt & pepper
- 1 mango, diced
- 1/4 cup cilantro, chopped
- In a medium sized pan with a lid, saute the butter and onions together until the onions are tender. To the onions, add the marinade, lime juice, zest, sugar, rice and water to the pan. Bring the rice to a low boil and then place the lid on the pan and turn heat to low. Let simmer on low heat for 20-25 minutes, or until the rice is tender. Once the rice is cooked, add the chopped cilantro and the diced mango to the rice. Season with salt and pepper and serve along side the chicken or shrimp skewers.
This is probably the most tasteful dish I have ever eaten.
Hi,
I made this rice last night for dinner and my husband said it was the best he ever had. He took it for lunch the next day as well and sent me a text telling me again how delicious it was. Just wondering though, what marinade do you use in the recipe? It just says 2 Tablespoons of marinade. Thank you for the posting this amazing recipe,it will certainly be added to my rotations.
Oops I forgot to ask what kind of rice you used? I used sticky.
I just used white long grain rice 😉
As per other comment, what marinade? Any kind? Thanks.
I am so glad you liked this rice! I do to 😉 I use the Citrus Grilled Shrimp marinade and it tastes awesome with this rice 😉 Thanks for leaving a comment.
