If your looking for a way to spice up grilled chicken without adding too much time or effort, this is the recipe for you. It’s a bit on the spicy side so go light with the rub on a few pieces if your cooking for kiddos. I usually marinate grilled chicken for up to four hours before grilling but this recipe eliminates marinating while giving a huge burst of flavor in minutes! I served it with a yummy zucchini and tomato casserole (coming tomorrow) and had an entire healthy dinner on the table in 40 minutes. Hope you enjoy it!


- 4 boneless, skinless chicken breasts cut in half lengthwise and pounded slightly for even cooking
- 3 teaspoons extra virgin olive oil or coconut oil
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp kosher salt
- 1 tsp cumin ( I like roasted cumin)
- 1/2 tsp chipotle chili powder
- 1/2 tsp smoked paprika (or regular paprika if you dont have smoked)
- 1/2 tsp ground coriander
- 1/2 cup honey (if not easy to stir warm in the microwave for 15-20 seconds)
- 2 tbsp lime juice
- On a baking sheet drizzle olive oil over both sides of chicken breasts and then rub oil over chicken to ensure they are covered evenly. Mix the next 8 ingredients in a small bowl then rub mixture on both sides of the chicken breasts. Set aside for a few minutes while you make the glaze by mixing together the honey and lime juice. Heat grill to high heat and grill chicken until cooked through, usually 3-5 minutes per side. Right before taking off the grill brush chicken with the honey glaze, and save the remaining glaze to brush once more before serving.
