If your looking for a way to spice up grilled chicken without adding too much time or effort, this is the recipe for you.  It’s a bit on the spicy side so go light with the rub on a few pieces if your cooking for kiddos.  I usually marinate grilled chicken for up to four hours before grilling but this recipe eliminates marinating while giving a huge burst of flavor in minutes!  I served it with a yummy zucchini and tomato casserole (coming tomorrow) and had an entire healthy dinner on the table in 40 minutes.  Hope you enjoy it!

Chili Rubbed Chicken with Honey Lime Glaze
  1. 4 boneless, skinless chicken breasts cut in half lengthwise and pounded slightly for even cooking
  2. 3 teaspoons extra virgin olive oil or coconut oil
  3. 2 tsp chili powder
  4. 1 tsp garlic powder
  5. 1 tsp onion powder
  6. 1 tsp kosher salt
  7. 1 tsp cumin ( I like roasted cumin)
  8. 1/2 tsp chipotle chili powder
  9. 1/2 tsp smoked paprika (or regular paprika if you dont have smoked)
  10. 1/2 tsp ground coriander
  11. 1/2 cup honey (if not easy to stir warm in the microwave for 15-20 seconds)
  12. 2 tbsp lime juice

  1. On a baking sheet drizzle olive oil over both sides of chicken breasts and then rub oil over chicken to ensure they are covered evenly. Mix the next 8 ingredients in a small bowl then rub mixture on both sides of the chicken breasts. Set aside for a few minutes while you make the glaze by mixing together the honey and lime juice. Heat grill to high heat and grill chicken until cooked through, usually 3-5 minutes per side. Right before taking off the grill brush chicken with the honey glaze, and save the remaining glaze to brush once more before serving.
