If you want a delicious syrup for the Spongy Yeast Waffles I shared yesterday, this Peach Raspberry Syrup is fantastic. It is peach and raspberry season, so buy these fruits on sale and enjoy this simple, fresh syrup on your favorite breakfast recipes 🙂


- 2 cups fresh peaches, sliced or cut into small pieces (skins removed or left on)
- 1/2-1 cup raspberries
- 1 1/2 cups sugar
- 1 tsp. vanilla
- 1 Tbls. lemon juice
- 2 Tbls. butter
- 1 Tbls. cornstarch
- Dash of salt
- Peel and cut the peaches and place in a medium sized sauce pan. Add the sugar, vanilla, lemon juice, butter, cornstarch and salt to the pan. Before you turn on the heat, stir the ingredients together until the cornstarch is dissolved or mixed together with the fruit. Turn the stove to medium heat and bring syrup to a low boil. Let the syrup boil until the fruit is tender and the syrup becomes slightly thick. Add the raspberries to the syrup, stir and serve warm over pancakes, waffles or french toast.
