Looking at my past posts I realized I need to get off my sweet-tooth kick and post about something savory and salty. These Chipotle Chicken Paninis are the perfect solution. My Mom and I went to Paradise Bakery a couple weeks ago and she got a Chicken Panini Sandwich that was completely sub-par. I was determined to go home and see if we could make this sandwich a little more special. This chipotle mayo takes this sandwich to a whole new level. It’s creamy, a little spicy and full of great flavor. These paninis are simple to make and a great, weeknight meal.
Chipotle Chicken Paninis
  1. 6-8 hoagie buns
  2. 2-3 boneless skinless chicken breasts, cooked and seasoned with salt, pepper and cumin
  3. 6-8 slices pepperjack cheese (or colby jack cheese)
  4. 1 avocado, sliced
  5. 2-3 tomatoes, sliced
  6. 10-12 slices bacon, cooked
  7. Chipotle Mayo (1 cup mayo + 1 Tbls. chipotle peppers)--blended until smooth

  1. Cook the bacon until crispy and set aside. Grill or cook the chicken and season with salt & pepper. Slice the chicken into pieces. Slice the avocados and tomatoes. Mix together the chipotle mayo and spread a generous amount on both sides of the hoagie bun. Place slices of bacon, pieces of chicken, tomato and avocado on the sandwich. Top with a slice of cheese. Place the sandwiches in a hot press panini maker and cook until golden brown.
