This recipe is one that you’re probably wondering what it even is. Growing up with a German mother I had the chance to try many different kinds of foods and Spaetzle is one that is not only easy to make but quite delicious. Spaetzle is essentially a home made noodle or dumpling that is made in mere minutes. Its a great side dish that the kids will enjoy and will also give you a grand sense of accomplishment for mastering. If you are in the mood for an experiment this is the recipe for you! I serve it with pork chops or another yummy German dish called schnitzle!


- 2 1/4 cups flour
- 1 tsp kosher salt
- 1/4 tsp pepper
- 1/4 tsp nutmeg
- 3 eggs
- 3/4 cup whole milk
- 1 tsp parsley
- 1 tsp thyme
- 1 tsp chives
- 1 tsp sage
- 2 tbsp butter softened
- Mix together the flour, salt, pepper and nutmeg in a large bowl. Whisk in the eggs and milk making a soft batter then fold in the herbs. Spread butter around the sides of a large clean bowl and set aside. Bring a large pot of salted water to a boil. Working with about 1/3 of the batter at a time press the batter with a rubber spatula through either a slotted spoon, a course grater, or sieve that has about 1/4 inch holes into the boiling water. You can also put all the batter into a ziploc bag and cut off a 1/4 in corner and let the batter drip into the boiling water. Seems tricky, but is quite simple once you get the hang of it. The spaetzle cooks really quickly so as soon as you drop it into the water stir it and cook for about 2-3 minutes or until it all floats to the top. Remove with a clean slotted spoon and place in the buttered bowl. Continue until you have used all the batter. Can be kept at room temperature for up to 3 hours or even made a day ahead.serve with yummy smothered pork or meat dish that has gravy!
- * if you don't think your kids will like the herbs you can leave them out to make plain spaetzle!

Ellen I had no idea you like schnitzel and spaetzle! Heath was an exchange student in Germany and he makes it for us once in awhile. His exchange mother gave him a spaetzle maker. We love it! Such a yummy meal!
