For the last few weeks I have been confined to my bed, I pride myself on being good at many things but being pregnant is NOT one of them.  My body fights me the entire 9 months!  Usually when in this predicament my picky palate suffers greatly, but this time around my husband has been much more adventurous in the kitchen and has come up with some pretty amazing meals (with my guidance, of course) Pork has been his meat of choice because it requires no marinating and he is an instant gratification type of guy and a meal based around pork can usually be completed in 30 minutes or less…equal to his attention span in the kitchen:)  These delicious pork chops came out spectacular!  So moist and the sauce was to die for yummy…I could have eaten it over ice cream!  Extremely proud of my awesome husband for this fantastic meal! We served it with a delicious stuffing recipe I will post later and the entire family enjoyed was even better the next day!

Caramel Apple Pork Chops
  1. 4 Boneless pork chops (about 3/4 in thick)
  2. 2 tsp olive oil
  3. salt and pepper
  4. 1/4 cup brown sugar
  5. 1/4 tsp cinnamon
  6. 1/4 tsp nutmeg
  7. 4 tbsp butter
  8. 2 apples of your choice.. peeled, seeded and sliced

  1. Heat a large skillet, brush both side of pork chops with olive oil and sprinkle with salt and pepper. Place in the hot pan and cook for about 3 minutes each side or until done. Pork cooks fairly quickly so be careful not to over cook or the meat will become dry. Transfer pork to a dish and cover with foil to keep warm. In a small bowl combine sugar, cinnamon and nutmeg. Add butter to skillet, stir in brown sugar mixture and apples. Continue to cook apples until tender. Remove apples from with a slotted spoon and place on top of pork. Continue cooking the sauce until it thickens slightly then pour over pork and apples. Serve immediately.
