If you need an easy recipe that tastes like pie, looks like pie but isn’t pie? These Butter Pecan Bars give you all the flavor of a homemade pecan pie without any of the work! These bars are so super simple and perfect for a holiday gathering when you don’t have a lot of time to bake. Enjoy and have a wonderful Thanksgiving week!


- 1 stick butter, cold
- 1 cup flour
- 2 Tbls. brown sugar
- 4 Tbls. cold water
- 3 eggs
- 2 1/4 cup brown sugar
- 3/4 cup pecans, chopped
- 3/4 cup coconut
- 2 tsp. vanilla
- 3 Tbls. flour
- 1/2 tsp. salt
- Crust: Mix together in a bowl with a pastry knife until the butter begins to break down and the crust is slightly crumbly. Spray a 9x13 pan with cooking spray. Pour the crumbly crust mixture into the pan and then press with your hands the crust into the corners of the pan, covering the bottom the best you can. Bake the crust at 350 for 13 minutes and then remove from the oven.
- Filling: In a mixing bowl, whisk together the filling ingredients and combine until everything is incorporated. Pour the mixture over the crust and return to the oven for 28-30 minutes. Remove from the oven and let cool, then cut into squares.
