Almond Cranberry Cheesecake Bars
Crust
  1. 1 1/2 c. oats
  2. 1 c. flour
  3. 1/4 c. almond, sliced or chopped
  4. 2 sticks butter, softened
  5. 3/4 c. brown sugar
  6. Dash salt
Cheesecake Layer
  1. 2 (8 oz.) cream cheese, softened
  2. 2 eggs
  3. 2 tsp. vanilla
  4. 2 tsp. flour
  5. 1 tsp. salt
  6. 4 Tbls. sugar
  7. 1/2-1 canned whole cranberry sauce

Instructions
  1. In a mixing bowl, combine the oats, flour, almonds, softened butter, dash of salt and brown sugar together with a fork. Once crust is combined, place all of the crust (except for 3/4 cup which will be reserved for the topping) into a 9x13 pan and press the crust onto the bottom of the pan. Open the can of cranberry sauce and place spoonfuls of it on top of the crust sparadically all over the pan. Spread a 1/4 inch layer of the sauce over the entire top of the crust. In another mixing bowl, with an electric mixer, blend together the cream cheese and sugar until smooth. Add the eggs, vanilla, flour and salt until combined. Pour the cheesecake mixture over the crust. Top the cheesecake layer with the remaining crust and sprinkle around the to cover the top as best you can (if there are a few wholes that is okay). Bake at 350 35 to 40 minutes or until center is set. Cool completely in pan on wire rack. Cover; refrigerate until serving time (up to 1 day). Cut into bars.

You know a dessert is good when after several years you still think about it and crave it. These cheesecake bites have been on our holiday menu every year since she introduced me to this recipe. They are simple to make, use up the cranberry in your food storage and have all the flavors you are wanting in a holiday treat. These are great to make ahead of time and keep in your fridge for an upcoming party. They slice up really pretty and are all around a fabulous, festive treat. Enjoy 😉
