

- 1 1/2 c. oats
- 1 c. flour
- 1/4 c. almond, sliced or chopped
- 2 sticks butter, softened
- 3/4 c. brown sugar
- Dash salt
- 2 (8 oz.) cream cheese, softened
- 2 eggs
- 2 tsp. vanilla
- 2 tsp. flour
- 1 tsp. salt
- 4 Tbls. sugar
- 1/2-1 canned whole cranberry sauce
- In a mixing bowl, combine the oats, flour, almonds, softened butter, dash of salt and brown sugar together with a fork. Once crust is combined, place all of the crust (except for 3/4 cup which will be reserved for the topping) into a 9x13 pan and press the crust onto the bottom of the pan. Open the can of cranberry sauce and place spoonfuls of it on top of the crust sparadically all over the pan. Spread a 1/4 inch layer of the sauce over the entire top of the crust. In another mixing bowl, with an electric mixer, blend together the cream cheese and sugar until smooth. Add the eggs, vanilla, flour and salt until combined. Pour the cheesecake mixture over the crust. Top the cheesecake layer with the remaining crust and sprinkle around the to cover the top as best you can (if there are a few wholes that is okay). Bake at 350 35 to 40 minutes or until center is set. Cool completely in pan on wire rack. Cover; refrigerate until serving time (up to 1 day). Cut into bars.

so there are three quarters cup of brown sugar in the crust and only 4 tablespoons of sugar in a cheesecake part? is that right?…seems like a strange proportion for two full bricks of cream cheese and like a lot of sugar for a crust
But they look really delicious and I want to make them, just want to make sure I'm doing them right! 🙂
Thanks Michelle for the question. Yes, there is more sugar in the crust and the strudel you put on top than in the cheesecake. The cranberries are also so sweet you want the cheesecake layer to be a little less sweet so the bars aren't overly sweet. If you want a little more sweetness in that layer you could add a 1/3 cup instead of 4 Tbls. if you want. Hope you enjoy it 😉
