Flank Steak is such a great cut of meat.  I love that it marinades well and cooks quickly on the grill.  I often double the amount of marinade and throw an extra piece of flank steak in a freezer safe bag with marinade. That way as it is defrosting the marinade seeps in perfectly.  Its a great way to save time and have a meal ready effortlessly for another day.  This is a marinade I have used for a very long time but decided to change it up a bit by adding a flavorful sauce.  Its a  great way to make the dish seem extra fancy without too much extra work. This would be a great New Year’s meal for a nice, dinner party.

Marinated Fans Steak with Blue Cheese Cream Sauce
  1. 1 1/2- 2 lbs flank steak
  2. 3/4 cup canola oil
  3. 1/4 cup soy sauce
  4. 1/4 cup honey
  5. 2 Tbsp red wine vinegar
  6. 1 Tbsp liquid smoke
  7. 1 tsp garlic powder
  8. 6 green onions chopped
Blue Cheese Cream Sauce
  1. 1 tbsp butter
  2. 1 clove of garlic, minced or crushed
  3. 1 tbsp flour
  4. 1 cup heavy cream
  5. 4 oz blue cheese
  6. salt and pepper
  7. 1 tsp fresh or dried chives

  1. Steak: Combine all the ingredients except for the steak and green onions in a blender and mix well. place steak in a ziploc bag with marinade and chopped onions and place in the refrigerator for a minimum of 4 hours. You can leave it overnight for extra flavor. When ready to cook, heat grill to medium high and grill for 5-6 minutes each side depending on the thickness. Let rest for 5 minutes then cut across the grain into thin strips and serve with or without sauce.
  2. Sauce: Heat butter in a saucepan until melted, add garlic and cook for 1-2 minutes or until aromatic but being careful not to burn. Stir in flour quickly then pour in heavy cream and simmer until reduced slightly and the sauce starts to thicken, about 5 minutes. Stir in blue cheese and season with salt and pepper. Pour over steak and sprinkle with chives.
