This past weekend I was browsing through my blog deciding what dessert I wanted to bake for a family party. I came upon a recipe for these Tahiti Blondies that I have not made since 2010. I remembered loving them but had forgotten I had posted about this recipe. These are not like a traditional blondie. They are special in the fact that they have pineapple inside the batter. The pineapple makes the bars so soft and moist and give them a slight tropical flavor. I love the slightly salty nuts on top with the melted chocolate chips throughout the bar. These rich, sweet bars would be great for any occasion and extra special for the upcoming Super Bowl 🙂

Tahiti Blondie Bars
  1. 3 cups brown sugar
  2. 1 1/2 cup butter, softened
  3. 4 large eggs
  4. 2 1/2 Tbls. vanilla
  5. 3/4 tsp. salt
  6. 2 tsp. baking powder
  7. 1 1/2 cups coconut
  8. 1 cup pineapple tidbit, drained well
  9. 3 cups white flour
  10. 1 cup milk chocolate chips
  11. 1 cup white chocolate chips
  1. 1/2 cup cashews, chopped
  2. 1/2 cup coconut
  3. 1/2 cup milk chocolate chips
  4. 1/2 cup white chocolate chips

  1. Preheat oven to 350 degrees. Spray a cookie sheet with cooking spray. In a medium bowl, whisk together flour, baking powder and salt and set aside.In another bowl, whisk together brown sugar and butter until combined. Add eggs and vanilla to mixture and mix well. Take the flour mixture and fold into wet ingredients until combined.Fold in coconut, chocolates, and pineapple into batter. Try not to over mix. Pour batter into prepared baking pan and smooth out with a spatula or spoon. Top with extra coconut, chocolate and cashews (optional). Bake for about 35-40 minutes, or until top is light golden brown. Cool to room temperature before cutting. You can drizzle with caramel if you would like 🙂
