Buffalo Chicken Taquitos
Ingredients
  1. 8 oz. cream cheese, softened
  2. 1 tsp. dry ranch dressing mix
  3. 1/4-1/2 cup Franks Hot Sauce (buffalo style)
  4. 2 cups shredded cheddar cheese
  5. 3 boneless skinless chicken breasts, cooked and shredded
  6. 2 Tbls. milk
  7. 1 pkg. flour or corn tortillas
  8. Butter, melted for baking
  9. Serve with ranch, crumbled blue cheese & more Frank's sauce

Instructions
  1. Cook and shred the chicken. In a mixing bowl, place the cream cheese, hot sauce, milk and ranch dressing mix. Stir to combine and to soften the cream cheese. Add the shredded chicken and shredded cheese and combine some more. Place a 1/4 cup of the mixture into the center of a tortilla and spread along the center. Roll up the tortilla as tightly as you can and place on a baking sheet that has been sprayed with cooking spray. Place all of the rolled tortillas onto the cooking sheet and then brush the tops of the taquitos with some melted butter. Place in a preheated oven at 400 for 20-25 minutes, or until the tops of the taquitos are golden brown. Serve with ranch dressing and more buffalo sauce.

Alright..one more tailgating recipe before I go back to a slightly healthier version of my blog (I’m trying, I promise ;). I can’t help but blog about these Buffalo Chicken Taquitos though–hey, at least they were baked not fried, right?!? Bottom line is they were phenomenal!!  If you are a huge fan of buffalo like I am, these were such a great appetizer at our Super Bowl Party. These would be great served as a main dish too and come together quickly if you have pre-cooked chicken already in your freezer. Dip these taquitos in ranch drizzled with Frank’s hot sauce and some crumbled blue cheese and you will be in buffalo heaven!
