I love pizza. Sometimes I feel like I never grew out of my child-like cravings for such a simple and basic food. I have to admit I am not picky when it comes to pizza. Give me a $5 Little Caesar’s pizza any day of the week! Well, the other weekend I was trying to be a little healthier and decided to make a dish that would give me the flavor of pizza without all the carbs and fat. I was thrilled when the outcome was a fresh, flavorful salad that tasted just like my favorite pizza joint’s BBQ Chicken Pizza. If you are craving pizza but want a slightly healthier option, this salad is a keeper!

BBQ Chicken Pizza Salad
Ingredients
  1. 3 grilled and seasoned chicken breasts, cubed
  2. 2 cups fresh pineapple (or canned), and diced
  3. 1 red bell pepper, diced
  4. 1/4 cup cilantro, chopped
  5. 2 stalks green onions, sliced
  6. 2 Tbls. red onion, diced
  7. 1-2 cups shredded colby jack cheese
  8. BBQ Sauce
  9. Ranch Dressing
  10. 2 heads romaine lettuce, chopped

Instructions
  1. Grill the chicken until cooked through. Season with salt & pepper. Once chicken is cooked, cut into 1/2 inch cubes and set aside. Chop the lettuce into small pieces and place in a large bowl. Chop and dice the cilantro, red bell pepper, pineapple, green onions and red onion. Place the chopped vegetables and chicken on top of the lettuce. Drizzle the top of the salad with ranch dressing and bbq sauce.
