Seeing that there are only a couple days until St. Patrick’s Day, I thought I would come up with a festive green breakfast of some sort. I gave the kids the option of Green Eggs & Ham but that didn’t go over very well. I had a bowl full of limes on my counter and my recipe wheels started turning. I decided to create a lime-coconut infused waffle recipe. With a little green dye it became a recipe that was simple enough for kids but sophisticated flavors for me 😉 This waffle and butter syrup was a fresh, tropical new breakfast idea for your upcoming St. Patrick’s Day celebrations. At our house it is Lucky Charms the morning of the ‘real’ St. Patty’s Day…thanks to the Leprechauns I get a day off of cooking 🙂

Coconut Lime Infused Waffles
Waffles
  1. 2 1/2 cup milk
  2. 1 cup coconut milk
  3. Zest of 2 limes
  4. 1/2 cup lime juice (2 limes)
  5. 1/4 cup sugar
  6. 6 eggs
  7. 2 tsp. salt
  8. 1 tsp. vanilla
  9. 2 tsp. baking soda
  10. 1 1/2 Tbls. baking powder
  11. 4 cups flour (white or wheat flour)
  12. Green food coloring (optional St. Patrick's Day flair)
Lime Infused Butter Syrup
  1. 1 stick butter
  2. 1 1/2 cup sugar
  3. Zest and juice of one lime
  4. The rest of the coconut milk can (from the batter)

Instructions
  1. In a large mixing bowl, combine the milk, coconut milk, zest of limes, lime juice, sugar, eggs, salt, vanilla and whisk together until smooth. Add the dry ingredients. Stir the batter until it is smooth and mixed together.
  2. Heat a waffle iron, spray with cooking spray and place a 1/3 cup (more or less) of the batter and cook until lightly golden brown. Serve the warm waffles with the butter syrup.
  3. Put all of the above ingredients into a sauce pan and bring to a low boil. Boil for 4-6 minutes, or until the syrup begins to thicken. Take off the heat and let the syrup slightly cool and then serve over the waffles.
